Snickers protein ice cream

Ingredients

• 400 mlskimmed milk
• 40 gchocolate whey protein
• 25 gpowdered peanut butter
• 30 gsalted caramel sauce
• 25 gcaster sugar
• 1/4 tspxanthan gum
• 30 gsnickers

Method

1. 1. Pour the skimmed milk into a blender. Add the chocolate whey protein, powdered peanut butter, salted caramel sauce, caster sugar and xanthan gum, then blend for about 30 seconds until completely smooth, so the sugar dissolves and the powders leave no lumps.
2. 2. Pour the mix into the tub up to the max line.
3. 3. Freeze for 24 hours on a level shelf, without the lid, so the surface stays flat.
4. 4. Check that the surface is flat. If there is a hump, scrape it off with a spoon. Leave the tub to stand for 10–15 minutes. Don't run it under hot water, as the ice block can come loose and damage the machine.
5. 5. Put the tub in the machine and run the Lite Ice Cream programme.
6. 6. If it looks powdery, give it a re-spin, adding 1–2 tbsp skimmed milk if it is very powdery.
7. 7. Chop the snickers into small pieces. Dig a hole in the middle of the ice cream down to the bottom, add the pieces and run the Mix-in programme.

•Drizzle a little extra salted caramel sauce over each scoop and add a few chopped salted peanuts for a closer match to the bar.

•This lean mix freezes firmer than a cream-based ice cream, so a re-spin straight after the first spin gives a smoother result.
